Pumpkin Schmear
Todays #recipeoftheday can be used as a spread or dip and incorporates our favorite seasonal flavor #pumpkin ! This recipe, like most, can be tailored to your family's tastes and preferences. Using pumpkin is a great way to increase your intake of Vitamins A and C, and by making your own spreads and dips you are controlling the amount of sweetness your getting. I love using maple syrup, and molasses because of their strong flavors, which enables me to use less in recipes. If you prefer another sweetener of choices use that in replacement of the maple and molasses in this recipe! This is great on toast, or as a fruit dip!
-1/2 block reduced fat cream cheese softened to room temperature
-1/4 cup reduced fat plain yogurt (Snowville Creamery is my favorite)
-1/4 cup pureed pumpkin
-1 Tbs maple syrup
-1/2 Tbs molasses
-1 tsp pumpkin pie spice
-1/2 tsp vanilla extract
Mix all ingredients together well. This is done very easily with a hand mixer. Once well combined, store in an airtight container and keep in the fridge for 7-9 days.
