Lentil Soup
Lentil soup…. Oh how I love it. There are lots of things in the kitchen that are easy to mess up but this never fails. Theres so many great things to say about this soup I don't know where to start. Its hearty, full of fiber, perfect on a cold day (or really any day). Leftovers are great, and it freezes well! It's a winner on all fronts. Enjoy!
In the bottom of a large soup pot add:
-1/4 cup Olive Oil
-1 large onion chopped
-1 green pepper chopped
-4 cloves fresh garlic; no need to chop
Saute for 5 minutes
-Add in 2 cups dry green lentils
-1 Tbs ground cumin
-1/4 cup apple cider vinegar
-Salt and pepper to taste (I usually use 1 tsp of each)
-7 cups of water (less if you want it super thick, more if you want it thin)
Boil this all together for 25-30 minutes. To make this creamy add the soup in shifts to your blender. Blend it down to the consistency you like. I use an immersion blender (hand held blender good for soups) to puree this straight in the pot. Serve with a dollop of greek yogurt and salted pepitas (pumpkin seeds)!!
