Lemon Cake

This cake is worthy of a mama in your life. Its rustic, dense, tangy, and sweet. Fool proof! We have been piecing on this cake all week!

Cream together 

1 stick butter

3/4 cup coconut sugar 

3 eggs

2 tbs Lemon zest 

Add in:

1 1/2 cups quick cooking oats

1/2 cup gluten free pancake mix 

1/2 tsp salt 

1 cup milk 

2 Tbs lemon juice 

Bake in a sprayed cake round at 350 for 18-20 minutes. Let it cool and top with icing below

Mix together for icing:

2 cups powdered sugar 

1/4 cup melted butter 

1/4 cup lemon juice 

2 Tbs lemon zest
