Chocolate Covered Strawberries

Valentines Day calls for some fun, healthful treats! Molten lava cakes are my absolute favorite, butttt I'm trying to keep it on the lighter side today. I use the darkest chocolate I can find, but semi-sweet or milk will work too. The darker you get on the chocolate scale the less sugar it contains. Chia seeds add a nice crunch and a good dose of healthy fats, but any small "crunchy" thing will do! 

-1 package strawberries; washed and dried, tops left on

-1  1/2 bars  Endangered Species 88% Dark Chocolate

-Sprinkling of chia seeds or any other favorite topping. Chopped roasted almonds, peanuts, or other candies work well!

Melt chocolate in a double boiler or you can do this in 30 second increments in the microwave. Dip each strawberry into the chocolate and place on parchment or wax paper. Sprinkle with topping while drying.

Buckwheat and Oat Cakes

With the syrup done from yesterday I was thinking about what to do with it come morning. Pancakes of course, but what type?? Buckwheat and oat are two of my favorite flours, both gluten free, full of fiber, and have great texture. These are just delicious! This recipe makes 9 ish 1/4 cup scoop pancakes. 

-2 large eggs

-2 Tbs olive oil

-1/2 Cup Low fat vanilla yogurt (my favorite to use is Snowville Creamery Low Fat Vanilla)

-1 Cup Fat Free Snowville Creamery Milk

-1 tsp vanilla extract

-1 Cup ground up rolled oats

-1 Cup Buckwheat flour

-1 tsp baking powder

-1 Tbs cinnamon

-1 tsp salt

Mix  all ingredients together in a large bowl until well combined. Spoon onto prepared griddle or pan by the 1/4 cup. Smooth out to the desired shape as batter will be thick. When bubbles form in center flip them! Enjoy with maple syrup and fruit!

Citrus Fruit Salad

Fruit can be expensive during the cold winter months! My solution is to stick with more citrus. Good for the wallet as well as the body. Yum. To make supremes, fancy word for segments of the citrus fruit, remove the outer peel by slicing down the sides of the fruit. Cut into each wedge on both sides releasing the segment from the membrane. 

-1 large pink grapefruit cut into supremes 

-2 large navel oranges cut into supremes

-1/2 cup blueberries

-1/2 cup raspberries

-juice of 1 lime

Combine all ingredients. Chill. Enjoy!
