Broccoli and Pea Curry

I have been on a huge Indian food kick lately. The pungent spice mixes, the endless combinations of veggies, and I mean how delicious is Basmati rice. I’m all about whole grain everything but Basmati is good, like realllll good! I always feel so good after eating Indian. I don’t know what it is. I feel the turmeric just healing my body from the inside out. Ahhhh I love it. This dish is so easy. I based it off a recipe I found in a favorite Ayurvedic cookbook of mine. For the spice mix search “spice” in my recipe box tab!

Saute 2 Tbs Indian Spice mix in 1/4 cup olive oil

Once the spices are fragrant add in:

1 head of broccoli cut into florets

1/2 head cauliflower cut into florets

1 cup frozen peas

2 peeled, cubed, and par cooked potatoes

Saute for a few minutes. Add in 1/4 cup of water and cover to allow the vegetables to soften. Add in 1 can of drained chickpeas.

To finish add in 1 Tbs Ghee or butter. Salt and pepper to taste. Serve with Basmati rice. It’s really that easy!

Broccoli Tater Bake

I needed a quick dinner on the table in less than 30. This was the ticket. If I’m gonna eat veggies they need to be roasted. That crisp texture and complex flavor. Can’t.Be.Beat🙌🏼 This would be great with cauliflower too or any cheese you’ve got on hand. Make it your own!

1 package organic tater tots

1 large head broccoli separated into florets

2 handfuls cheddar cheese

olive oil

garlic powder

scallions

lay taters out on a lined cooking sheet. Add broccoli florets and give em a good douse of olive oil and a dash of garlic powder. Combine. Bake at 425 for 25 minutes. For the last 5 of baking add cheese and scallions.
